First of all let me say that I love anyone who flies in the face of convention, toots their own horn, and dares to be different. The family that owns Vare dares to do just that.
Imagine a Napa Valley producer that makes no Cabernet! That's not so crazy but, these folks don't produce anything red at all - and every wine they make is bottled in either a very sexy 500ml vessel or a very friendly 1.5 liter. That's CRAZY. That's COOL.
Vare has the first and only planting of Ribolla Gialla in the US. Yellow Ribolla originates in Friuli and Slovenia where it is still widely planted today.
The wine is mouth-filling, floral, with lemon zest, a very slight nuttiness, and pointed acidity. I can imagine the wine as a foil to any creamy sauce and as a perfect companion to oysters and other Fruits de Mers.
